Just a few inches tall, Microgreens are packed full of Vitamins (A, B, C D, E & K) and important minerals like, calcium, Chlorophyll, Iron, Magnesium, Manganese, Phosphorous, Potassium, Niacin & Zinc. Microgreens are also high in levels of essential amino acids, antioxidants and proteins.
A comprehensive study carried out by the United States Department of Agriculture and published by the Journal of Agriculture & Food Chemistry in 2012 found that microgreens had 4 to 60 times the nutritional content of the adult plants.
Microgreens punch well above their weight in terms of flavour & are great in salads, pestos, dips & not to forget cocktails!
